Wine & Swine 2018 Line-Up

The Menu: whole pigs, pulled pork smoked beef, mesquite charbroiled oysters, grilled salmon, grilled yard bird, and a ton of sides originally based on southern side dishes but interpreted by us.

**we realize this is a lot of food and may change everything up by the time it gets here, but you get the point.

-Almost forgot we also have a bunch of chef friends from around the country coming in to cook their favorite cuisine!

Super Famous Chefs!

Chef Tom Ramsey, LA Food Prize, @cheftomramsey- I take blame for introducing my friend Tom to Shreveport and we as a city will never be the same! Tom Ramsey is a chef, sommelier, raconteur, writer and media personality living in Shreveport, Louisiana. At his “day jobs” he manages the Louisiana Food Prize and writes about food & travel as Contributing Editor of Okra magazine.

Chef Eleazar Mondragon, Ki’ Mexico, @mr_dragon – 2017 Golden Fork Winner! Chef at the local favorite Ki’ Mexico. Eleazar and his brother Rodrigo are both Wine Country Alumni, good friends, and restaurant rockstars! Chef Eleazar and Chef Tom Ramsey will team up and make Mexican Boudin!

Chef Tristen Epps, @tristen1117, coming off a recent win on Food Networks Chopped, Tristen is coming to hang out and show off his worldly take on Swine fare. Tristen has recently left the Marcus Samuelsson Group in NYC to join Tag Restaurant Group in Denver, CO.

Chef Dustie Latiolais, @cochon.cannery, @dustie.latiolais, a long-time friend and culinary Cajun rockstar has gone all in on his new venture Cochon Cannery in Breaux Bridge, LA that sells the famed Bacon Jam and a whole bacon lineup. Dustie will be sampling his Bacon Jam Cupcake with Cinnasugar Pork Skins!!!

Marco D’Emidio, Oxford MS, former head chef and head Pizzaiolo at Saint Leo restaurant in Oxford Mississippi, was born and grew up on a small farm in a little town on the east coast of central Italy. Since he was a little boy, Marco spent a lot of time attending every-day cooking lessons from his grandmother, mother, and aunts, trying to learn their secrets and skills. After stints in restaurants and pizzerias in Italy while attending college, he worked as research marine geologist for over 8 years before being involved in the opening, in 2016, of the Saint Leo restaurant in Oxford MS, a 2017 James Beard Award semifinalist as Best New Restaurant. Marco is now refocusing his life toward his family and pursuing his new challenges as a parent, personal chef, YouTuber, woodworker, gardener, and tennis player. He will be showing off his “Fagiolo con le cotiche e pancetta arrosto” translates to “Kick-ass Pork Belly and Beans”

Blake Jackson @drakecatering –We always love working with Chef Blake and enjoy his desserts the most from Whisk Desserts (now served on Wine Country’s menu) Shreveport is lucky to have such a focused culinary vision. Can’t wait to see what he has in store!

Mathew Kajdan, @mathewkajdan –Mathew is executive Chef of The Westin Hotel and Estelle Bar & Bistro in downtown Jackson, MS. All sounds cool, but the real deal is he is part of the famed Mississipi Bacon Association that just took 2nd place at this year’s Hogs for the Cause!!!

The Farmers

Evan McCommon, Mahaffey Farms, @mahaffeyfarms- local legend and magazine cover model, Evan also produces some of the best local protein around including some swine custom raised for Wine and Swine

Craig Smith, Smith Family Farms, @smithfamilyfarmslouisiana –Our friend Craig and family have been producing great local beef, pork and lamb and are about to open up their own butcher shop. We proudly serve Smith Family burgers and are looking forward to some Smith Family Brisket Mac n Cheese on April 22nd.

Josh Heller, Farm Manager for Homeplace Pastures in Como, MS, @homeplacepastures – Our friends at Homeplace are doing it right and we are excited to have them in town for the event and to hang out with Craig Smith and Evan McCommon! (building connections)
