In the Kitchen: A Q&A with a soulful chef

Wine Country Bistro Executive Chef Anthony Felan has been one of the mainstays of Shreveport’s Slow Food movement for many years.

At Wine Country, he is known for cooking using as many local ingredients as possible on his menus. Felan describes his style of cooking as “soulful,” stating, “I always like to cook the way I would like to eat. It always comes from my heart.”

For his Food Prize dinner, he is most excited about a sous vide pork belly dish he has in the works.
